Ingredients:

  • 1 cup boiled and mashed potatoes
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped coriander leaves
  • 1 green chili, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp pav bhaji masala
  • Salt, to taste
  • 8 pav buns
  • 1/4 cup butter
  • 2 tbsp tamarind chutney
  • 2 tbsp green chutney
  • Sev and chopped onions, for garnishing

Instructions:

  1. In a bowl, mix together the boiled potatoes, onions, coriander, green chili, ginger paste, garlic paste, pav bhaji masala, and salt.
  2. Divide the mixture into equal portions and shape them into rounds shape vadas.
  3. Heat a oil and shallow-fry the vadas until they turn golden brown on both sides.
  4. Cut the pav buns into halves and toast them on a griddle with some butter until they are golden brown.
  5. To assemble the vada pav, place one of the fried Vadas between the toasted pav buns halves.
  6. Apply a generous amount of green chutney and tamarind chutney on the inside of the pav buns.
  7. Serve hot, garnished with sev and chopped onions.
  8. Enjoy your vada pav!
