
Ingredients:
- 1 cup boiled and mashed potatoes
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped coriander leaves
- 1 green chili, finely chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp pav bhaji masala
- Salt, to taste
- 8 pav buns
- 1/4 cup butter
- 2 tbsp tamarind chutney
- 2 tbsp green chutney
- Sev and chopped onions, for garnishing
Instructions:
- In a bowl, mix together the boiled potatoes, onions, coriander, green chili, ginger paste, garlic paste, pav bhaji masala, and salt.
- Divide the mixture into equal portions and shape them into rounds shape vadas.
- Heat a oil and shallow-fry the vadas until they turn golden brown on both sides.
- Cut the pav buns into halves and toast them on a griddle with some butter until they are golden brown.
- To assemble the vada pav, place one of the fried Vadas between the toasted pav buns halves.
- Apply a generous amount of green chutney and tamarind chutney on the inside of the pav buns.
- Serve hot, garnished with sev and chopped onions.
- Enjoy your vada pav!
